Cinnamon Mornings and Chocolate Dreams

Yield: 2 servings 

Ingredients:
Combine:
4 beaten egg yolks
1/4 cup room temp milk
1/4 cup lukewarm water
1 T sugar
1/4 tsp. salt (optional)
1 grated lemon rind

Beat until stiff:
4-5 egg whites

Instructions:
Fold into the yolk mixture.

Melt in a heavy cast iron skillet:
2 T butter

Pre-heat oven to 400 degrees.

Pour the batter into the hot skillet and cook over low heat on the stove top with the lid on for about 2 minutes to set up batter. Place the skillet into the hot oven for about 7 minutes until it becomes a golden, puffy hat. Careful with the hot handle as you remove the skillet. The Glacier Baby may fall (or cave, as they say in glacier-speak) so don't worry.

Serve at once with the traditional confectioners sugar and lemon juice or with fireweed or spruce tip syrups. Another excellent option is with sauteed in butter apples slices and a dollop of whipped cream. Yummmm!
