Ingredients: 1 cup Low-Fat Blend (blend 1 cup nonfat yogurt & one cup lowfat or nonfat cottage cheese) 1 1/4 cups white flour 1 cup low-fat buttermilk 2 tablespoons sugar 1 tablespoon vanilla extract 1 vanilla bean, split, seeds removed from the pod 2 1/4 teaspoons baking powder 2 egg whites Instructions: 1. Preheat a waffle iron, and lightly spray it with vegetable oil. 2. In a large mixing bowl, blend all the ingredients except the egg whites. 3. Whip the egg whites to soft peaks and fold them into the batter. 4. Pour the batter into the waffle iron, and cook until golden brown. Continue until the batter is used up, spraying or wiping the waffle iron with oil as needed. Notes: Celebrity recipe |
