Cinnamon Mornings and Chocolate Dreams

Yield: 3 dozen 

Ingredients:
3/4 cup softened butter
1 cup packed brown sugar
1 tsp. vanilla
1 egg
1 2/3 cups flour
1/2 tsp. baking soda
1/4 tsp. salt
2 cups white chocolate chips
3/4 cup chopped almonds
3/4 cup chopped dried apricots

High Altitude adjustment: Add 1 Tbsp. flour

Instructions:

Preheat oven to 350 degrees. Beat butter, brown sugar and vanilla in a large mixing bowl until creamy. Beat in egg. Gradually stir in flour, baking soda and salt. Add chips, almonds and apricots. Drop batter from a #40 ice cream scoop onto ungreased cookie sheet. Bake 10-12 minutes. Let cool on cookie sheet for 2 minutes. Remove from pan and place on wire rack until cool. Balls of raw cookie dough can be placed on a cookie sheet and frozen. Then put into ziploc bags to store in freezer.
Variation: Use walnuts and dried cranberries in place of almonds and apricots.
