Cinnamon Mornings and Chocolate Dreams

Yield: 2 dozen 

Ingredients:
3/4 cups self-rising cake flour (to make, add 1 teaspoon baking powder, 1/2 teaspoon salt, & 1/4 teaspoon baking soda to 3/4 cup of pastry flour)
1/2 cup sugar
2 jumbo eggs, separated
4 ounce (1 stick) of un-salted butter
Pinch of salt
1 tablespoon grated lemon (or orange) rind
2 tablespoons fresh lemon (or orange) juice

Instructions:
Preheat oven to 400 degrees. Get out two 2 or 3 quart bowls and one 1 or 2 cup glass cup. Cut the stick of butter in 4 or 5 pieces and microwave for about 40 seconds or until melted. Beat egg whites until they form soft peaks, then, without cleaning beater, beat sugar and egg yolks together until light. Fold in flour, salt, lemon rind-- fold in cooled butter and juice. Fold in egg whites. Fill buttered and floured Madeleine pans 2/3 full and bake 10-15 minutes until they rise and are firm. They do not have to be brown on the top. Let the pans cool about 5 minutes before trying to remove the madeleines.

Low(er) Fat Version: Replace the 1 stick of butter with 4 tablespoons oil & 4 tablespoons apple sauce, and use no egg yolk, but 3 egg whites instead.
