Cinnamon Mornings and Chocolate Dreams

Ingredients:
4 cups apples peeled & chopped
1-1/2 cups sugar
2 tablespoons lemon juice
2 cups flour
1/2 teaspoon salt
1/2 cup corn oil
1 cup chopped walnuts
2 teaspoons baking soda
2 eggs
2 teaspoons vanilla extract

Instructions:
(A favorite to serve with Afternoon Tea)

Preheat oven to 350 degrees. Spray bundt or tube pan with Pam. Mix sugar, apples and lemon juice and set aside for 30 minutes. Sift flour, salt and baking soda. Beat eggs with oil with electric mixer. Add flour mixture, then apples, vanilla and nuts. Mix at low speed for 30 seconds. Pour batter in pan. Bake one hour. Cool in pan, then turn onto plate. Sprinkle with confectioner's sugar or serve with a little ice cream. Enjoy!
