Cinnamon Mornings and Chocolate Dreams

Ingredients:
3 lbs. Venison loin
Olive oil
Black pepper

Instructions:
Rub all sides of venison with olive oil, roll in black pepper. Brown in large skillet. Place skillet in pre-heated 350 degree oven, bake for 15-20 minutes for medium rare. Remove from oven, and set aside to rest on a warm platter.

Bourbon Chutney Sauce

2 cups chutney
1/2 cup bourbon
2 cups veal demi glace (or brown sauce)
white pepper

Wipe frying pan meat was prepared in, do not wash. Pour in 1/2 cup bourbon, 2 cups chutney, 2 cups demi glace or brown sauce, bring to a boil. Pepper to taste. Set aside while you slice venison into thin slices. Serve venison on warm plates with chutney and bourbon sauce. Serves 8.

Note: brown sauce is packaged in most stores. However, veal demi-glace is also available at gourmet stores and gourmet super markets.
