Ingredients: 4 eggs
4 strips bacon
1/2 cup grated cheddar cheese
1/3 cup cream
2 green onions, chopped
Salt - to taste
Cayenne pepper - to taste
Instructions: Heat oven to 350°F. Spray 2 individual large muffin tins. Cook bacon in microwave until mostly cooked - still slightly limp.
In small bowl, blend 2 eggs, cream and salt & pepper; set aside.
Wrap 2 strips of bacon in the bottom of each tin.
Top with 1/2 of the cheese and 1/2 of the onions.
Crack 1 egg in each tin - keeping yolk intact.
Pour blended ingredients in each tin. Top with remaining onions & cheese.
Bake for 15-20 minutes, or until raised and golden on top.
Sprinkle plate with small pieces of green onion. Place egg in center of plate and serve with additional slices of bacon. Bon Appetite!
