Cinnamon Mornings and Chocolate Dreams

Ingredients:
5-6 cooking apples
5 Tbsp sugar
2 tsp cinnamon
3 cups flour
3/4 cup vegetable oil
1/4 cup orange juice
2 1/2 tsp vanilla
1 cup sugar
4 large eggs
3 tsp baking powder
1/2 tsp salt

Instructions:
A wonderful easy cake and great in the fall when we have all those apples.

Peel and core apples and cut into small pieces, about the size of a thumbnail. Mix with 5 Tbsp sugar and 2 tsp cinnamon and let stand while mixing the cake.

Preheat oven to 350 F. Grease and flour a 10" tube pan with removable bottom (angel food cake pan). Mix all ingredients in a mixer for a minute or two on medium speed until all is blended. Spoon 1/2 of mixture into pan and cover with 1/2 the apples. Add the rest of the mixture and the rest of the apples. Bake 1 1/2 hours. Let cool in pan and then remove for slicing and serving.
