Cinnamon Mornings and Chocolate Dreams

Ingredients:
4-5 large apples diced (Winesap or York/or cooking apple preferred)
2 teaspoons cinnamon
4 teaspoons sugar
(Half of last 2 ingredients will be mixed with diced apples-mix rest with 3 tablespoons brown sugar and sprinkle over top of batter before baking)

4 eggs
3 cups sifted flour
3 teaspoons baking powder
2 cups sugar
1/2 cup orange or pineapple juice
1/2 teaspoon salt
1 cup vegetable oil
2 1/2 teaspoons vanilla

Instructions:
*Peel and core apples and then dice/blend with some lemon juice as to not turn dark and mix with half of cinnamon, sugar combination and set aside. Grease and flour 13 x 11 pan (Pyrex or other).

Beat eggs gradually with sugar and then oil. Beat well. Resift flour with baking powder and salt and add to beaten mixture in small amounts. Mix, alternating with orange or pineapple juice, finally, beat in vanilla.

Pour half of batter into large greased pan...then arrange apple mixture...then top with rest of batter-sprinkle sugar mixture on top. If using metal pan, bake at 350 degrees for 1 hour and 15 minutes (more or less, test it after one hour). If using Pyrex, oven temp will be 325 degrees. Do not over bake, as will become too dry.
