 Chesapeake Crab Cakes Recipe

Yield: 6 servings 

Ingredients:
3 slices white bread, torn into bite-size pieces
2 tsp water
1 lb fresh lump crabmeat, drained, flaked and picked clean
2 eggs, beaten
1 1/2 Tbsp mayonnaise
1 1/2 Tbsp Worcestershire sauce
1 1/2 Tbsp chopped fresh parsley
1 1/2 tsp stone-ground mustard
1 1/2 tsp Old Bay seasoning
1/4 tsp salt
1/4 cup butter

Instructions:
Place the bread in a large bowl. Sprinkle with the water, just to moisten. Add the crabmeat, eggs, mayonnaise, Worcestershire sauce, parsley, mustard, Old Bay seasonings, and salt. Mix together; mixture should be lumpy. Shape into 6 patties. Melt the butter in a saute pan and cook each crab cake on both sides until golden brown. Alternately you may bake the crab cakes on a lightly greased baking sheet in a 500 degree oven for 12 minutes, or until golden brown.
