Cinnamon Mornings and Chocolate Dreams

Ingredients:
1 cup minced shallots
2 Tbsp. extra virgin olive oil
6 cloves garlic, minced
4 cups reserved lamb braising broth
1 cup French green lentils*
1 cup finely diced carrot
1/2 cup single malt Scotch
2 Tbsp. thinly sliced sage leaves

*French green lentils are the most flavorful variety and will retain their shape the longest.

Instructions:
In a large saucepan, saute the shallots in the oil until translucent. Add the garlic, and saute for a few minutes more.

Add the lamb broth and lentils. Bring the mixture to a simmer, cover, and simmer 25 minutes. Add the carrot and simmer 10 minutes more. Check the lentils for doneness; they should be cooked through but retain their shape and a hint of firmness. Cook them a few minutes more if necessary. When the lentils are done, add the Scotch and sage, and heat the mixture through.
