 Lucille's Onion Soup Recipe

Yield: 5 servings 

Ingredients:
4 cups thinly sliced, large mild onions
1/4 tsp pepper
5 Tbsp margarine
1 tsp salt
5 1/3 cups chicken stock
5 beef bouillon cubes (dissolved in 1 cup boiling water)
5- 2" toast rounds, lightly spread with garlic butter and broiled until brown

Instructions:
Saute onions in butter until golden brown. Sprinkle with pepper. Bring water to boil & dissolve bouillon cubes. Add stock, onions & salt. Simmer, covered about an hour. If there's time, let the soup sit overnight to enhances the flavor. Place a toast round in each bowl and cover with soup. If desired, sprinkle with parmesan cheese.
