 Butternut Squash Soup Recipe

Yield: 4 servings 

Ingredients:
1 large butternut squash, peeled, seeded, diced and cubed (1 inch cubes)
l large, sweet onion, chopped
1 leek (white part), chopped
1 quart chicken stock
1 cup crème fraiche or whipping cream
3 strips of smoked bacon
white pepper to taste
salt to taste
2 Tablespoons organic honey
3 stalks of celery, peeled and chopped

Instructions:
Saute together the sweet onion, leek, bacon, and celery. Add peeled and seeded butternut squash and chicken stock. Simmer until squash is soft; add heavy cream, salt, white pepper, and honey. Blend together in a blender until smooth and pass through a strainer. Garnish with chives and pancetta or smoked duck.
