Ingredients: 1 pound cooked black beans
8 cups of cooked white rice
2 medium onions
6 cloves of garlic
1/2 sweet red pepper (not hot)
dash of Worcester sauce (or equivilent - We use local Salsa Inglaisa but you will have to come here to buy that)
Instructions: Boil black beans in pressure cooker with 3 cloves of garlic and a hefty pinch of salt until cooked, use directions on the package of beans. Saute onion, garlic and sweet pepper till soft - Not brown. Add the rice and the beans and mix together. Season if needed, and add the Worcester sauce or better yet, the Salsa Inglaisa.
This simple yet delicious local dish is usually served with scrambled or fried eggs (over easy), here in Costa Rica. My guests love it and usually take the recipe home. Come to my Inn and I will show you how to cook it personally.
