Ingredients: 3 slices of thinly sliced white bread Cucumber 1/4 package softened cream cheese 3 tablespoons prepared horseradish 1/2 teaspoon onion salt 1/4 cup very soft, but not melted, butter Small amount of softened cream cheese in pastry bag Fresh herb leaves or small flower blossoms for garnish Instructions: Cut bread with cookie cutter in daisy or shape of choice. Cover with plastic wrap and set aside. Slice cucumber in very thin slices and if the cucumber is large enough, cut the cucumber in the same shape and size as the pieces of bread. If the cucumber is too small, peel and chop finely. Mix with a small amount of softened cream cheese, horseradish and onion salt. Spread each piece of bread with butter. Spread with cucumber/cream cheese filling, or with cream cheese filling and a slice of cucumber. For open-faced sandwiches, decorate with herb leaves or flower blossoms. If you wish, top sandwiches with lids. Use pastry bag and small amount of softened cream cheese to pipe a tiny rosette on top of sandwich so that herbal decorations can be anchored in the cream cheese rosette. |
